San Diego: a few missing pieces (long)

Hi; we are NYC chowhounds who'll be visiting San Diego for at least our 10th time (full disclosure: for Comic Con). BUT we always stay up near Kearny Mesa so we can be near GOOD FOOD!

I've just read the boards till I'm blurry and I got some really good rec's and updates to our old favorites (Japanese, Thai, dim sum, pho) but I have a few unanswered food cravings:

Highly recommended fish tacos? (We've enjoyed the ones at Hudson Bay and --is this a crime?-- Rubio's, but I have a feeling fish-taco nirvana is still out there waiting for us.)

Ceviche? Stand, restaurant, whatever, as long as it's Fresh.

Best Korean restaurant? (We always eat at the same palace-like one [Korea House?] but I didn't see any discussions of Korean restaurants, so what are we missing?) which leads me to:

Tofu House? We tried one of these last year at random, but I don't remember which (it was a few blocks north of Balboa). It was a surprise hit but I don't have much to compare it to. Any rec's?

Last year, we ate at a Chinese seafood restaurant on Convoy south of Balboa that's run by an English guy and we had some great large, fresh (live) shrimp. Hope we can find this place again... or any similar or better Chinese seafood ideas?

I think that's about it. Unless someone can tempt me to ever set foot in a Mexican restaurant again (hurt too many times {sob} I guess my expectations are just too high...). I can't look at another plate with vomitous refried beans and orange rice.
