Low-Salt Coldcuts?

My mother loves coldcuts but cannot have too much salt. She also doesn't want huge portions of any meat, she is alone and can't consume a lot.

I would like to find a deli that has such things offered so I can buy sliced meats in smaller portions, but I also realise salt is the basis for curing, taste, protection...

Is there any such stuff in Toronto?
