The other night I made homemade pizza for dinner. I decided to make an arugula salad, but was bored with my usual combinations. Played around with some stuff that was in the fridge and came up with an awesome salad that even my husband loved- he typically doesn't eat salad because it "takes up space in his stomach."
Here goes.. I tossed some arugula with balsamic, olive oil, salt, and coarse black pepper. Added in some watermelon chunks, tossed it all together and plated it so that the watermelon sat on top of the arugula. It needed something else... so I added some balsamic glazed cippolini onions that I had in the fridge.
Turned out to be a delicious salad with a mix of warm and cool, peppery and sweet. Cant wait to make it again!
