Rolling Cooking in West Springfield has delicious Szechuan food. I have to admit I don’t have too much experience with authentic Szechuan, but I’ve been there several times in the past year and I definitely like it. The menu has recently expanded beyond what is on their online menu, including at least one item that must be ordered 24 hours in advance, but I have not tried any of the new items.
Noteworthy items I’ve had are Chili Chicken Chef Special (small bites of dry fried chicken), Braised Fish Chef Special, Salty Pepper Prawn Chef Special, Double cook Pork Sichuan Style Chef Special (a must have), Ma Po Tofu, Flaming Lamb, Crispy or Szechuan Sting Beans (not sure which it is called). I also like the snow pea leaves with garlic – it is simple and maybe not Szechuan but I like it.
I think they might adjust spice levels based on their impressions of the customer. Last time I was there I had many family members ordering “American Chinese” dishes (which they seem to do well, btw) and asking for “not spicy”, so that may have influenced things, but the Szechuan dishes seemed to really lack the Szechuan peppercorns. I haven’t had that problem other times, but I will mention it next time I order.
