Roast Recipe with the Oven Turned Off - has anyone tried this with a gas oven?

Hi All-

I bought an eye of round from WF that is a GIANT piece of meat. Ridiculous. It was on sale and SO is a big meat eater. So I bought it. Problem is I don't know what to do with it.

I saw a recipe that suggests cranking the oven, leaving it in there for a certain amount of time, then turning the oven off and leaving it in there undisturbed for 2 hours (perhaps less I don't have the recipe in front of me). But I was reading somewhere else that it is not safe to do that with a gas oven because sometimes they don't keep temperature properly. So the person recommended leaving the oven at 170 and checking the roast every half hour.

My concern with that is that every time I open the door heat will escape and 170 is dangerously low I would think if the heat keeps escaping?

My gas oven is quite wonky and seems to run a bit cold.

Any feedback much appreciated (and perhaps more efficient recipes for the beef)!
