Roast Pork Sandwich

Anyone have an italian roast pork sandwich - with provolone and Broccoli rape? I know there's a good example of it at tony luke's in NYC.

Any suggestions on how I could reproduce this at home?
I assume the meat to be a pork butt or shoulder. I tried slow roasting one. it came out good but little or no drippings for sauce.
