Risotto with coconut milk

Hey everyone,

I have a question. I was thinking of making an asian flavored risotto, with snow peas, bamboo shoots, etc. mixed in. However, I want to make it with coconut milk instead of water.

My question is: is this possible? If it isn't how would you suggest infusing the coconut flavor into the rice after making the risotto normally?
