Remarkably old swiss cheese is, well, remarkable

O.K. So I forget it was in the fridge. Nudged to the back by more important items and left all alone to age. It was vacum sealed and yet there was a light layer of hard white mold. I shaved it off. It smelled just fine. Nutty and sweet actually. It was about six months past the date of purchase.

I used it to top french onion soup. After a couple of bites, my sister, intrigued, asked if I had gone out and bought an expensive gruryere. "Yes", I lied, "Yes, I did."
