I recently ate at a Vietnamese restaurant called Tamarind Tree (http://www.tamarindtreerestaurant.com/) in Seattle. One of the dishes I had was Bánh mặn củ cải tôm (Steamed prawn coconut rice cake). I would really like to recreate this dish, but I have no idea how. Here is a blog post I found describing it, with a picture:
My best guess is to mix coconut milk and rice flour together into a dough-like batter and steam it. Or it could be soaked glutenous rice blended with a bit of coconut milk into a paste. I've tried to google search for a recipe, but have come up empty. Any help?
