About 15 years ago we stayed at a B&B in Lambertville, NJ for New Years Eve. The breakfast in the morning included a small dish made with steamed asparagus and hard boiled eggs, with a sauce. Thinking back on it, it might have been a simple Hollandaise, though it could have been a mornay. Has anybody had a dish like this?
I know that asparagus and Hollandaise are a classic combination. It was served warm in ramekins, so it might have been baked. Until I started writing this post, it never dawned on me that it might be just as simple as steaming some asparagus, layering with some room temperature hard boiled eggs and covering with Hollandaise. Thoughts?
