For Christmas this year we are going with the fresh ham, excuse me, fresh pork leg!, as my butcher keeps correcting me. Since there are only 5 of us for Christmas Eve dinner and the leg is about 20 lbs, hes going to cut it in half for me.
For Christmas Eve, I'm doing the recipe some 'hound posted somewhere for Pierre Franney's mother's fresh ham. But now I need a recipe for New Year's Day. I'm leaning towards something Cuban, with the garlic and the citrus marinade but I lack a recipe. Help!
Of course, I will be happy to report back on which leg people preferred.
