I'm looking for a recipe to use as a base for making white pizza (pizza with no tomato sauce). Most of the recipes I've found suggest just using ricotta as a base and then topping with your cheese, etc. The white pizzas I've enjoyed had more of a creamy base, obviosly garlic, a little EVOO, spices, but what else to keep it creamy and not dissolve into just an oily "mess" on top of the dough? A thick alfredo maybe? I would welcome your suggestions.
My favorite white pizza is topped with a mixture of several cheeses, fresh sliced roma tomatos, thin slices of red onion and either braccoli rabe or spinach sauteed in oil & garlic.
