Ramen Lunch @ Sushi Bistro (SF)

Cynthia and I headed to Sushi Bistro yesterday to try the ramen for lunch. Available here in either shoyu or miso stocks, we ordered one of each.

Flecked with but a few beads of oil, the soup stocks were relatively greaseless and tasted more of a meaty base and bones than the shoyu or miso flavorings. I found the judicious hand with shoyu sauce a good thing. With a lower salt load, I drank nearly all the broth. Not cloudy, the miso stock was particularly light in taste. The crinkly fresh egg noodles were a weakpoint, turning soft too fast in the hot broth. Yet, the ramen deserves good marks for the freshness and bright flavors of the toppings –-- bright green spinach, hard-cooked egg, barely fermented bamboo shoots, freshly cut scallions, and a generous serving of four thick slices of tender but not mushy roast pork loin with a tasty rim of flavorful fat.
