Rainbow Appearance on Pork Belly Skin?

Hello! I’ve got a strange debacle on my hands. I’ve tried working with pork belly a few times, but this is the first time I bought it fresh.

When I pulled it out of its packaging yesterday (the skin was face down) parts of the skin had a bit of a rainbow appearance on it - towards the middle where it was slightly concave, and a bit on the corner edge. A quick Google search led to a lot of discussion of it just being a trick of the light that happened on many meat products, and that eased my concerns. So I continued on, tossed it into a bag with a handful of other ingredients, and cooked it with my sous vide. Tastes brilliant, so I chopped off a small chunk to nibble on and froze the rest for some future recipes.

All was well until this morning, when I hacked a slice off of one of the ends, and immediately recognized a multilayered discoloration in the corner. Definitely far less technicolor now that it had been braised in soy sauce and rice wine and cooked for 7 hours, but it was obviously the discoloration I’d seen before, and clearly wasn’t a trick of the light. I chopped it off and tossed it before continuing on (I wish I took a picture now) but the more I think on it, I’m increasingly worried for the portion that is frozen.

Which brings me to my question: should I be concerned? Should I tape a sticky note reminder to myself to slice off the skin for when I go to thaw the rest of it? Or should I toss the whole batch and pray I’m not going to get sick from what I’ve eaten? I had purchased it fresh Thursday night, it smelled fine and didn’t have an abnormal texture. I just don’t know what to make of it...
