What to do with rabbit sausage?

I bought about a pound of rabbit sausage (bulk ground, not links) from a CSA when I helped out for a day a couple weeks ago. The lady I was working with praised it so much and her 6 yo daughter was as much in love with the sausage as she was with the "pretty bunnies" that I just had to try it myself.

Since it was frozen when I bought it, I had no qualms about tossing it into the freezer when I got home to hold it over until I could think of something to make with it. I would like to make it this weekend or next, but I have been racking my brain and googling like crazy and I am having a hard time finding recipes specific to rabbit sausage. I would like a recipe that really showcases the sausage and would bring out any and all flavors of the meat and seasoning.

I have never had rabbit sausage before and short of just making it into patties and frying them like little sausage burgers, I am not sure how to get the full flavor experience.

I have considered rabbit sausage risotto or gumbo, but I am afraid that the myriad of ingredients in gumbo would bury the sausage flavor. The only problem I have with the risotto is that my sister won't touch it because it "smells like stuffing" which she hates.

If anyone has any favorite recipes that are great for making any type of sausage shine, I would be happy for your suggestions. Bonus points for recipes that are specifically geared towards rabbit sausage.
