Quintessential Chicago?

We're visiting next week and we're wanting to try restaurants unique to Chicago. We enjoyed a veritable "Eating Olympics" on our last trip a couple years ago and enjoyed every last morsel, but with a few exceptions, we didn't venture into uniquely Chicago restaurants. We love everything from elaborate to hole-in-the-wall -- our only requirement is a festive yet non-touristy atmosphere, and again, that it be something of a Chicago institution. Suggestions?
