Question about using Sesame Oil

Hi All - I have recently acquired a taste for asian inspired food. In an effort to slowly incorporate some of the flavors in to my home cooking I have begun to introduce some less western ingredients, one of which is sesame oil. I came across a few types today, with the major differences being 'refined for hight heat' (FAR more expensive) and 'unrefined for low heat'. I understand the chem-differences, but I had a question about application...

To achieve the sesame infused flavor do you need to stirfry in sesame oil? Or, can you stirfry in a neutral oil then add the sesame oil right at the end?
