I hope this new Chowhound will get a tip or two from fellow Hounds not interested in nouveau sushi, or anything with mayonnaise, cream cheese, sriracha, etc., just the finest fish etc. and rice assembled with traditional care.
I've experienced the work of many sushi chefs in Virginia Beach, Norfolk, Hampton, Newport News, and Chesapeake since the introduction of sushi to our area. None have ever equaled Yama, first of Tokyo Inn in Va. Beach, then of Sushi Yama in Newport News, now retired. Ebi of Kyushu is my current favorite.
I recently visited Urban Spoon's highest rated area sushi restaurant, and thus solidified my opinion that most in this area have no clue what great traditional sushi is, or simply prefer something else called sushi.
Please do not mention chefs and restaurants that do not make their own traditional tamago.
But if you know the exquisite feeling and flavor of a carefully selected and sliced slab of tuna belly atop perfectly cooked and flavored rice, please let all of us know who made it and where you found it.
