I love all things pumpkin and tend to get a little crazy with it this time of year. I usually stick to muffins, breads, soups, etc. but decided to try pumpkin cookies. The recipe I used came out decidedly cake-like and not cookie like. I like a soft cookie, but the texture actually made them seem like mini-cakes. They tasted great, but weren't what I was looking for.
Does anyone have a tried and true pumpkin cookie recipe? I would preferably like one w/out shortening in it, as I don't eat partially hydrogenated oils. Thanks in advance.
