I bought a 3.5 pound prime chuck roast that was absolutely gorgeous at Costco yesterday. It is so incredibly marbled. Half I will try to slice thinly, marinate, and grill for tacos.
What would you do with a cut like this? It was only $6 a pound so I really wouldn't mind grinding it up for exquisite burgers or even a good green chili burrito.
