In Praise of a simple meal ala Whole Foods

As much as I love haute cuisine, Chinese -Thai - Vietnamese - Indian - French - Mexican - Italian - you get the idea - I love a simple meal and tonight was a supreme example of one. I stopped at the new Whole Foods in Redwood City. I wandered up and down all the aisles and enjoyed samples of about 6 different kinds of apples and cheese. I didn't really feel like cooking tonight so I ended up at the prepared foods section. The whole rotisserie chickens looked good (Rocky Jr.) so I picked up a lemon/thyme flavored one. I thought about getting the mashed red potatoes that looked so yummy but went back to produce. One large russet potato and one large jewel sweet potato later plus several other goodies (organic vegan chocolate marshmallows, La Brea bakery bread, some fancy cheese) and I was on my way. What can I say, delicious roast chicken, roasted sweet and white potato wedges (coarse salt, thyme and olive oil 425 degrees for about half an hour) plus a romaine salad with a mustardy vinaigrette plus the La Brea bread and some nice Chardonnay - all is right with the world in my house tonight... perhaps this should be posted elsewhere but I really can't think about it now. I'm full and happy!
