potato starch in my pie??

why would i put potato starch in pumpkin pie? there was a recipe for maple pumpkin brulee pie from Saveur #160 (probably the november issue, but i can't find the reference and i tore out the recipe!) i thought i might try it, but this addition of potato starch is throwing me off. i might just sub. corn starch or arrowroot…but Saveur knows better than to call for an unusual ingredient without reason. yet… i can't figure out WHY potato starch? i don't exactly keep that around…

they reference an old recipe where this one was modified from: perhaps it was just easier to find potato starch in ye olde 'merica?? frustration will be leading me back to my tried and true pumpkin pie...
