So, being house-poor as we currently are, I'm trying to buy cuts of meat that will stretch into tasty day-after lunches and sandwiches so we aren't buying every day.

That said, I picked up what seemed like a lovely Niman Ranch Pork Top Round the other day, and have NO idea how to cook it.

I currently have it marinating with some thinly sliced shallots in some spicy dijon, honey, rosemary and bay leaves. Is this an acceptable marinade for this cut of meat?

And how should I cook it? Should I sear it in my LC braiser first, then continue it in the oven? Should I roast it in a rack? To what internal temp?

I've done about 20 google searches, and can't seem to find any good info!
