Any place to eat in Lancaster?

We just returned from a 4-day trip to Lancaster in the Mojave Desert because of a family member's illness. What a desert, literally, in terms of adequate restaurants. Knowing it wasn't Carmel/Monterey, we didn't expect 4-star restaurants. But we did expect local favorites, maybe Mexican, soul, etc. We should have known there was a real problem when we asked at the front desk of the motel (no hotels there) and was told that the place to eat was either Marie Callender's or Coco's. We ignored that recommendation and paid for it the first day. The next 2 mornings we ate at Marie Callender's. The other meal of the day for us was at a Mexican hole in the wall that served the worst food we had ever had. But that was eclipsed the next day when we ventured into one of the buffets. We're lucky our systems fought off any real problems. Lancaster is a hash browns kind of town, filled with cheap buffets and fast food joints. My question to you guys is to tell me if we really missed a jewel. Palmdale would be OK, too, as it's nearby. We may have to return there soon, and we need help!!! Thanks.
