I will be frosting MINI cupcakes and would like to use a cream cheese frosting then dip in coconut flakes.
Ina Garten's recipe in half:
8 oz cream cheese, 12 oz butter, 3 C powdered sugar , 1 tsp vanilla, 1/2 tsp almond
8 oz cream cheese, 8 oz butter, 1 C powdered sugar, 1 tsp vanilla, 1/2 tsp almond
Which recipe will work better when piped with either a star tip or petal tip? I fear that it won't be stiff enough to create a pattern. I presume that the sugar will stiffen up the frosting but I don't want it overly sweet.
Or should I just use a knife to spread the frosting? This will be the only dessert I am serving at a party and would like it to look impressive (if possible for a novice?)
