I like to make Thai style curry and I make a mean red coconut curry with pork or chicken. However, my boyfriend has fallen in love with this simple pineapple curry with chicken we've had at several Thai restaurants. (It's freaky how similar they taste in different states.) While the dish is also made with red curry and coconut mines is more savory and not so delicate and sweet. Just adding pineapple to my recipe is not the same.
I use Mae Ploy curry paste, chicken stock, coconut milk, fish sauce, soy sauce, onions, ginger, garlic, and lime juice. I let the chicken mingle with with curry paste and onions before stir frying it and do prefer to thicken the sauce with cornstarch.
Any suggestions or maybe recipes of red pineapple curry I can try?
