First, I'm very disappointed in the overwhelming chemical taste in store-bought pickles, and more importantly, I think making my own will be fun.
I plan on making two batches. John Thorn has an interesting recipe for Bread and Butter pickles on his Simple Cooking site. And I found a recipe for Dill pickles on the Saveur site.
Does anyone have any experience making pickles at home? Specifically, my questions are these, 1) If I use completely clean jars, do I HAVE to cook the jars again after they've been filled? If so, how exactly is this done? I've never "canned" anything before. 2) How long must the pickles "cure" before they are ready, and for how long after that will they stay good? Can I simply keep them in my basement at roughly room temperature?
