Here's a link to photos I took of the all-day truffle-making fest. Click on each photo to enlarge. You can see the places in the vats of ganache where we dipped our spoon to taste before we started! :) And then you'll also see the decimated ganache at the end...and how much I had left over!!! Better to have way too much than not enough, though.
We still don't know why some of them "bloomed" a bit since we were using Guittard melting chocolate that didn't need to be tempered. They do look kind of cool, with a swirled-marble effect, and taste just fine. And once the colored stripes are on them, the blooming doesn't show much. My only thought was that perhaps that batch of chocolate got too hot when I melted it? I can't think of any other reason. Any ideas?
The color isn't quite right...the ribbons are green and purple, not green and blue. Oh well...you get the idea.
Anyway, hope you enjoy the photos. I'm excited to bring those baskets to church tomorrow!!!
