Pepita Taco Topping

Apparently I have tacos on the brain and had another idea that I need feedback on.

I spent some time in El Paso and recall eating a lot of different kinds of potato taco. Some of the potatoes were fried, some mashed, but the one that sticks out to me was boiled in a spicy broth, stuck in a tortilla with some pepitas on top.

I want to perfect this with really soft, fluffy potato bits, maybe some protein/dairy/herby salad, and a sort of spiced pepita crumble on top. That's where I'm kinda stuck, is the crumble.

Any idea/tips/tricks on how to make a good crumbly topping? Is a simple spiced pepita good enough or is there a way to kick it up a notch? I thought about breadcrumbs, but that seems like starch/carb overkill. Thought?
