How many people will a goose feed?

I am going to host a dinner on July 29, and there will be 7 people eating, myself included. As stated in the title, the main course will be a goose. For vegetables, I will serve carrots and green beans, and for carbs, I will serve stuffing made with French bread, bacon, ham, shredded pork rib meat, crayfish, Canadian lobster, Caribbean lobster, blue crab, and Argentinean king crab. For sauces, I will serve lingonberry jam and gravy made with a goose fat and bacon fat roux, homemade goose stock, bacon, and the crayfish and crab tomalley. Would a 5 to 6-kilogram goose feed everyone or provide more leftovers than turkey? I know it has a higher fat content, a denser texture, and a much richer flavour, so that would probably make it more filling than turkey. Thanks in advance for your help!

By the way, I was planning on making stock by simmering the goose bones, the goose giblets, the pork rib bones, the crayfish shells, the lobster shells, and the crab shells all together in one pot. Would that work out, or would the flavours of the most common shells/bones (in this case the goose bones, crayfish shells, and crab shells) overwhelm all the other flavours?
