The thread below about Italian recipe sites reminded me to ask this question: A friend of mine travelled in Italy last year and she says one of the best dishes she ate was something that translated as "pasta with lettuce sauce." I'd like to duplicate it for her, and I've looked through various Italian cookbooks and haven't been able to come up with anything that looks promising. I assume I could make a "lettuce" sauce by sauteeing various greens including arugula, then pureeing with broth, garlic, etc. But does anyone have a more specific idea of what this might have been?
Speaking of arugula, unfortunately here in New Orleans it's pretty much impossible to come by, except in tiny bunches at a high price, and the bugs keep eating my homegrown efforts before it gets mature enough to use. So other types of greens would be more practical.
