I have eaten some great fish on the New England, Florida, California, and Louisiana coasts. But, who would have thought I'd have the best in the middle of a smoky, mediocre casino like Harrahs in Vegas ?
First off, the Oyster Bar is not a typical "restaurant" - It is a bustling NYC style kitchen with bar stools facing the frenetic chefs who pump out remarkably tasty dishes. Great place to go by yourself if your friends won't leave the tables!
And, I swear, I have never had a better preparation than the Oyster Bar's Parmesan crusted Halibut with white lemon sauce. The fish was absolutely fresh, moist and flaky and cooked beyond perfection. It sat upon fresh spinach and thinly sliced potato rounds.
This all sounds typical but it was the sauce that took this entree to a grand level. I wish I knew beforehand to try and see them making it. They shared the ingredients "white wine, chicken broth, lemon, cream, garlic and shallots" - which together all sounds so typical. But the sauce was light as air and perfectly, beautifully white (which with lemon butter and chicken stock sounds impossible.)
If you go - do not pass up the oysters - all laying on a huge bed of ice behind the bar. Served on a half-shell fantastic - just the perfect "medium" size, ice cold. Served fried, light, and juicy.
