The ole bird is taking her sweet time.

I'm still poaching a whole chicken. Started the broth with 6 qts water,salt, peppercorn,bay leaf, cheese rind,porcini,vegtables. Lidias recipe for poaching whole chicken in vegtables. Stock is wonderful, everything. It's a old hen 4 1/2 lbs who quit laying. Given to me from a close freind from their farm. Iv'e been simmering now for three hours,and have removed most of the vegtables . Super flavor. But still tough as a alligator.When will she give up and be tender?
