I have a surfeit of nuts in my freezer right now (almonds, pecans, walnuts, hazelnuts, cashews, and more) and I thought I would try making some nut butters. Any tips? Can I just toast them in the oven, sprinkle on some salt, and whiz away in the food processor? Are there any combinations that work particularly well with certain nuts? Any other uses for large quantities of nuts - preferably not desserts, as there are only two of us and I don't want to fatten us up too much before the holiday season even gets underway.
