I saw a good review of Nogent knives in Art of Eating. Interesting that the blanks he is using are actually pre-WW2.
Anyone tried one of these? I think it would be nice, but am not especially adept at using a steel. I usually use a simple Wusthof sharpening tool It has 2 sets of ceramic sharpeneers at pre-set angles. Not sure if that would be the right tool for a Nogent.
