Nitro coffee in baking?

I want to sub coffee for Guinness beer in Gramercy Tavlern's Gingerbread cake and many reviewers suggest coffee. Since the beer is carbonated (an reacts with some baking soda in the recipe), I wondered if nitro coffee would be a good substitute and whether there might be any downsides.
