Last night I ate in a Japanese restaurant in Dan Sui, (a city in Guangdong province)where I was unsure about the fish quality. On the menu "lean tuna"(that's how they worded it) was listed but no Toro. Just out of curiosity I asked, and was at first told that they don't have it, and then was told that indeed they do have toro. So, my toro hand roll came with 3 pices of what looked like pork belly that's been boiled and then chilled. The white part is I assume the fatty part, the other part though was grey. I was hesitant. This was not the marble fatty tuna that I had in mind.
It was surprisingly smooth and meltingly rich. I would eat more if I didn't know what it looked like.
So, what DID I eat?
