It's really important, I'm finding, to ask for stuff spicy here.
1. they actually comply (I love that)
2. I'm finding that while the chef knows I like it spicy, if she doesn't see that the order's for me, she'll often go mild (the ever-rotating cast of part-time waiters doesn't help lock things in). That is, unfortunately, becoming the default if you don't specify. And her cooking doesn't work well when spicing's not at a roar.
I'm really quite certain that this is the reason for the sporadic mentions of "blah" dishes. I had a blah aloo gobi the other night, and it was all about restrained spicing (though I could extrapolate to greatness via sense memory). it's not just the chile...she holds back on ALL flavors when she holds back.
Please remember to specify spicy!
