Ok, maybe my naivety is showing but I was perusing menus for our upcoming trip and when looking at Lameloise in Beaune, there was a menu item listed as follows:
pièce de veau rôtie au poivre de Tasmanie | le ris de veau braisé
nectar de romaine | fricassée de rattes fumées aux sarments de vigne
jus à la fleur de sureau
Fricasee de rattes fumes - smoked mice
I did some googling and such and can't find any translation other than mouse and certainly nothing related to food specific. So, please, is there something missing in translation or is the gardener out there trapping ground creatures for use in the local 3* establishment?
