I'm making something called Gaucho Chicken Thighs, which involves marinating thighs overnight in wonderful stuff, including malt vinegar. Unfortunately, I don't have any malt vinegar. I have red wine, peach, and plain white. I used to have apple cider, but it seems to have disappeared. Can I substitute another vinegar (from the list above) or is there something unique about malt vinegar that would require a trip to the store (possibly 25 miles each way). Thoughts???
