Making kombucha

I'm as excited as excited can be. At a Chowdown this past Sunday, I met CH Addict's friend who promised me my very own kombucha culture.

Has anyone here grown his/her own kombucha culture? Any tips to share? Things to watch out for? Flavoring suggestions?

For those who haven't tried, kombucha is sometimes called "mushroom juice." You can buy it in bottles at fancy grocery stores. The ones I've tasted are quite tangy. Imagine a tea or unsweetened juice that's slightly fizzy and spiked with cider vinegar. To me, it's s refreshing change from water that's not sugary.

It's also supposed to have health improving qualities, but I really just like the taste.

I've linked a fairly detailed site below (but can't vouch for them in case you want to buy stuff, etc.) for those who are interested in learning about this. It's truly fascinating and at the same time a little gross, growing your own live "animal" for consumption. Okay, it's not an animal; it's bacteria and yeast. But still.
