Please help! Making cannele in copper molds but recipe uses silicone molds. Should I adapt baking time/temp?

bythebay | Jun 17, 202002:04 AM     2

Hi I made some great cannele's from a Jacques Pepin recipe using silicone molds. Came out amazing.

I want to proceed to trying them in coppper molds now but hope to use the same Pepin recipe from my first try that i liked so much.

To bake in copper molds now (which I will coat either with butter or with a baking oil spray, but not with beeswax) instead of silicone, will I need to adjust my baking times and temps or any other factors? And if so, by how much?

Currently I bake at 300 for 30 mins then 400 for about 40 mins in an electric oven.

Thanks so much for any help if anyone has advice, I really, really could use the advice. Thank you so much!
