maine shrimp

My last post reminded me that I have some boiled Maine shrimp chilling in my fridge at home. Does anyone crave this little, bright pink morsel as I do? In the early winter in Maine they can be bought from truck drivers who sell them by the side of the road. The season is fairly short. Here in St. Louis I asked my fish monger (Bob's Seafood) to order some and they came already headed. But in Maine they have the heads and between their little swimmerettes they hold a large clump of roe. Uncooked they are bright pink, cooked they turn much paler. The roe is delicious just sucked off the shell once they are cooked, and they peel like a dream. pat
