One lunch in Paris

This looks like a great board for a foodie, I've been avidly reading the reviews.

Where's a place you'd definitely not miss if you only had one lunch in Paris?
I'm arriving Paris early (7am) Monday morning in May and then hopping on the TGV to Dijon after lunch. Any Michellin stars to recommend in the EUR 30-50 range? I know lunches are probably the closest to being affordable. Preferable if (a) it's a quick ride to Gare de Lyon and (b) located where I can chill in a cafe whilst waiting for the restaurant to open (what with luggage and all).

I suspect on my return leg (where I will only have the evening in Paris, I'd probably go to L'avant Gout, sounds like hot fav from the reviews on this board. Any views?

Burdundy and Luberon, any hot favourites to recommend?
