Lovely gougeres - but missing something

I just made a batch using Alain Ducasse's recipe. They came out wonderful but my family felt the gougeres need some kind of stuffing. I tried a bit of goat cheese but it seemed to overwhelm the puff. Perhaps a bit of garlic & herb cheese? I looked at some other threads but didn't see any ideas for "stuffing". No meat please as there will be vegetarians. Thanks!
