Long weekend in NOLA

Hi ... I'm glad to discover this site and thanks in advance for any advice! Two of us are taking a long Labor Day weekend ... coming in Friday night, staying in the Audubon Cottages at Maison de Ville and have Sunday dinner booked at the Bistro. I would like advice on a good historic walking tour of the FQ, a late night voodoo or cemetery tour, whether any of those swamp tours are fun and worthwhile, and lastly, help filling in the dining gaps. Anybody ...?

I need a late night Friday restaurant, Saturday dinner; Saturday, Sunday and Monday breakfast or brunch; and Sat, Sun and Mon lunch suggestions. Not sure if we will be affected by restaurant closures in Aug. or Sun/Mon and holidays ... any advice besides have back-up plans??
