lobster confit?

I got a spiny tail last week at LA Fish and Ray (I think it is Ray) gave me last week's LA Times article including Thomas Keller's recipe for butter poached lobster. I made it and it was the best I ever had. So I am wondering, since the season is so short, could I cook some up in the duck fat in my freezer? I can't imagine a better Christmas dinner.
