Lexington KY pimento cheese

Ok Lexington cooks. You have an outstanding pimento cheese from a market called the Mouse Trap. My SIL brings it as a treat every time she travels to see family and friends. I’d like to try to replicate the spread. Any guess to see what the secret ingredients are? Mayonnaise and cream cheese? Mixture of American and cheddar? Grated onion?

It’s amusing that two blogs have posted what was alleged to be the recipe for the pimento cheese,and both of the recipes have been taken down. I presume that the owner of the shop considers the recipe a trade secret.
