Hi. I need to get a new knife, a very good one even if it's priced dearly. The main purpose will be for chopping off a few inches from both ends of lemongrass (the lemongrass is already harvested, but I need to remove a bit from both ends). I've found this to be a challenge with my existing knives, which aren't professional quality but still good. The hard leafy green stuff is particularly tough to get through if I try to cut a handful all at once. If someone can suggest an appropriate knife I'd really appreciate it. Thanks.
