LEGUME SALADS - Home Cooking Dish of the Month, May 2019

Welcome to the May 2019 Dish of the Month reporting thread! Our dish for May will be LEGUME SALADS.

This is a category that includes iconic American dishes like three-bean salad and Texas caviar. But if you want to go further afield, you can find examples from India, Ethiopia, France, and all around the world. Remember that legumes include English peas and peanuts, so it isn't just about beans. To keep this from being overly broad, I would suggest that the legume be a significant part of the salad. Perhaps a peanut dressing on an otherwise legume-free salad is not we had in mind. Soy sauce as an ingredient, even though made from a legume, wouldn't really count. Ultimately, you will draw your own lines, and we aren't going to be the legume police, but try to consider the spirit of this selection, as we explore its incredibly diverse possibilities.

If your recipe is original, you are welcome to include it in its entirety, if you like. And show us what you’ve got! Your photos are encouraged, but are by no means required.
